Chymotrypsinogen (CAS 9035-75-0), the inactive precursor of chymotrypsin sourced from bovine or porcine pancreas, has a molecular mass of about 24,000 and an optimum pH of 8-9, remaining stable in dry form but most stable in aqueous solution at pH 3-4.
